Redesign of a former café into a microbrewery, bar and community hub for the brand Simmentaler Bier. The project combines rustic alpine character with a modern touch, transforming the space into a vibrant meeting place that blends brewery, gastronomy, and retail elements.

Before

The former Café Florian had a charming industrial look, and many pieces of furniture could be reused. However, it lacked the distinct brewery atmosphere we wanted for the new Simmentaler Brewhouse. The terrace presented its own challenges – strong sun exposure often caused plants to wither, making the space feel harsh and uninviting. The location, situated near a busy meeting point in the main station area, felt more like a place people passed through than stayed. Our new design directly addressed these issues by adding identity, comfort and atmosphere.

Inspiration

The concept bridges the alpine roots of Simmentaler Bier with an urban context. Authentic materials such as reclaimed wood, metal and greenery connect heritage with modernity. The wood used for the back wall was sourced from an old timber house in the Simmental valley – a nod to the brand’s origin.

Realisation

The goal was to make the brewery character tangible – from the furnishings to the lighting concept.

Interior:
- New reclaimed-wood back wall extending higher to give the space more volume
- Deep green walls and a black ceiling for visual calm
- Wooden stage for live music and events
- Flexible product displays for rotating offers
- Beer-garden style lighting with string lights and artificial hop vines
- Refurbished metal furniture and lamps powder-coated in brand colours for a cohesive look

Exterior:
- Improved layout and seating through larger parasols with integrated seating structure
- Wooden entrance arch and matching planters with hops, dwarf trees and grasses, softly lit for evening ambience

Lighting & Technology:
- Flexible lighting design for bar, concert and daytime operation
- Integration of LED branding elements and neon signage

After

The Brewhouse has become a lively gathering place full of character. Wood, metal and greenery create a warm, authentic atmosphere, while beer-garden lighting and hop vines add a welcoming touch. The space now feels robust yet inviting – a place to stay, not just to pass through.

The new Brewhouse is more than a bar – it’s a piece of Simmental in the heart of Bern.
